BROWN POHA

Preparation Time: 10 minutes;
Cooking Time: 10 minutes;
Serves: 2;

Ingredients:

  • Brown flattened rice (poha/avalakki): 1 cup;
  • Black mustard seeds: 1 teaspoon;
  • Chopped boiled vegetables: 1 cup (carrot, beans, peas, cauliflower and capsicum);
  • Chopped medium size onions: 2;
  • Pinch of turmeric powder;
  • Curry leaves: 10-12;
  • Green chilies, slit and de-seeded: 2;
  • Refined oil: 2 teaspoons;
  • Lemon juice: 1 tablespoon;
  • Salt to taste;

For garnishing:

  • Chopped coriander leaves: 3 tablespoons;
  • Diabetacare Muskmelon and watermelon seeds: ½ teaspoon each;

Method:

  • Soak the brown poha in water for 15-20 minutes. Drain the water and keep the poha aside
  • Heat oil in a pan. Add mustard seeds, turmeric powder, curry leaves, onions and chilies and sauté for 2 minutes
  • Add boiled vegetables and cook for couple of minutes
  • Add the soaked poha and stir fry for 1-2 minutes. Make sure everything is mixed well
  • Cover the pan and let the poha cook for another 1 minute on low flame. Turn off the flame and add lemon juice over the poha
  • Mix well and garnish with coriander leaves and roasted seeds. Serve hot
